Cheese Enchiladas
- 12 corn tortillas(1 8 ounce package)
- 2 cups fat-free cottage cheese
- 4 ounces fat-free cheddar cheese
- 1 medium onoin, finely minced
- 1 15 ounce can Mexican style tomato sauce
Briefly warm tortillas to make them pliable. If you have microwave you can make several small slits in the package and heat them on high for about 30 seconds. Combine the cheeses and onion. Place a spoonful of the cheese filling on each tortilla and roll up. Place the enchiladas in a 9"x13" casserole lightly coating the bottom of the dish with tomato sauce. Pour the remaing sauce over the enchiladas. Cover tightly with foil and Bake at 350 degrees for 30 minutes. 4 servings: 3 grams of fat per serving
