Easy Tofu Vegetable Bake
1 tomato or grape tomatoes
1/2 large onion
1 carrot
red and green peppers
spinach
1/2 to1 block firm tofu
1 tablespoon olive oil
spices- I like to use some greek spices I have, but any kind of mixed spices will taste
good. (like lemon pepper)
Directions:
Pre-heat oven to 375. Cut up all of the tofu and vegetables (except grape tomatoes). Throw them into a baking pan or dish. Drizzle the oil on top and add some spices. Mix this in the pan. Once these have been mixed you can add more spices and mix again. Bake for about 30 minutes stirring occasionally.
This recipe is VERY flexible. You can add almost any kind of vegetable. In the summer it is very good with corn. Serve it with rice or baked potatoes.
Serves: 2-4

I remember that tofu is nasty and slimey. I just could never get into it.

you don't really taste it when it is mixed with a bunch of stuff. it blends in with with what its cooked with. I'm i right chris?

If you squeeze all the water out and cook it well it takes on whatever flavors it is cooked with.
There is a tofu in the produce section called Petes Tofu, it is marinated and comes with a sauce packet. THAT is delicious!!!!!
