Talking Vegan recipes?

Hey all. I am going to try going Vegan! I have already been a vegetarian for 14 years. Anybody know any great Vegan recipes...no dairy, seafood, meat, etc? Or cookbooks you can recommend?

Today is my first day!

Thanks!

1/4 C Dijon Mustard

Filling:

3/4 C. each of Broccoli, Mushrooms, Cauliflower,Onion, and Sweet Peppers
2C. Cheese
Italian Dressing
1 egg for wash

Precook veggies in microwave till soft. Heat water, butter, and mustard to 120-130 degrees. Mix together 3 C flour, yeast sugar and salt. pour heated water mixture into flour; Mix well. Gradually add remaining flour and knead for 4 min. Roll dough out on floured surface to fit large sheet. Place rolled dough on greesed sheet; stretch if Necessary to fit entire sheet. On middle third of dough place one layer of cheese and top with 3 T. dressing. Top with veggies in any sequence and sprinkle with 2 T dressing and top with cheese. Cut 12 slits on both sides of filling in dough from outside edge to just before filling(about 1/2 inch away). Bring edges together and braid. Thanks Countrymama
I haven't felt like cooking lately (I usually love to!) but I will copy this & file it away for when I get the urge to be creative in the kitchen!

Thanks!
Chris/Bruinsmama

It has egg & cheese in it but Shaws Supermarkets has substitutes for all that that are Vegan.
