3 - 4 green onions, with tops (scallions)
4 Tbls. butter or margarine
1 (15 1/4 oz.) can whole kernel corn
1 (14 3/4 oz. can) cream-style corn
1 cup sour cream (can use low fat or fat free)
1 7oz. pkg. corn muffin mix
2 large eggs
1) Preheat oven yo 325 degrees F. S

1 1/2 qt. baking dish with non-stick cooking s

2) Chop green onions finely. Place butter in small microwave bowl. Microwave on high setting until melted, about 15 - 30 seconds.
3) Drain whole kernel corn. Combine with green onions, butter, creamed corn, sour cream and corn muffin mix in large bowl. Mix well.
4) Whisk eggs in a small bowl until blended. Add eggs to corn mixture and blend just until all ingredients are moistened.
5) Spoon batter into prepared baking dish. Bake until set, about 45 minutes.
