Post Sweet Potato Souffle
serves 4 - 6

3 c. sweet potatoes, mashed
1/3 c. butter, melted
2 eggs
2/3 c. sugar
1/2 c. milk
1/2 tsp. vanilla

Mix together and put into a casserole dish.

--TOPPING:--

1 c. brown sugar
1/3 c. flour
1/3 c. butter, melted
1 c. pecans, chopped

Mix together and sprinkle on top of potatoes (may sprinkle cinnamon on top too, if desired). Bake uncovered for 35 minutes at 350 degrees.
