Thumbs up Garden Vegetable Quiche

Garden Vegetable Quiche Makes 2 (9") quiches

4 Tbls. margarine 1 lg. onion
2 green peppers 2 med. zucchini
2 cups mushrooms 2 med. tomatoes
6 eggs 1 cup milk
2 tsp. worcestershire sauce 3 tsp. seasoned salt
2 cups shredded cheddar 2 (9") pie shells

1) Preheat oven to 375 degrees.
2) Dice all vegetables.
3) Melt margarine in large skillet. Saute onions,
peppers, zucchini and mushrooms. Cook over medium heat for
about 10 minutes.
4) Add flour and tomato, stirring to blend flour.
5) Beat eggs, milk, salt and worcestershire.
6) Place pie shells on large sheet or heavy duty foil,
to prevent oven drips and spills.
7) Sprinkle 1/2 cup cheddar on bottom of each of the pie shells.
Pour sauteed vegetables into pie shells. Pour egg mixture over
vegetables. Sprinkle with remaining cheddar cheese.
8) Bake for 35 - 40 minutes in 375 degree oven.

This recipe freezes very well.

This does sound good. I wonder how much flour you use...it doesn't say.

This sounds good! I've always loved putting tomatoes,zucchini ,& mushrooms together in a recipe.
