Eggplant Parmesan
Eggplant Parmesan
1 lb. sausage
2 c. chopped onions
1 clove garlic, minced
1 (2 lb. 3 oz) can tomatoes
1 can beef broth
2 tbsp. water
2 (8 oz) mozzarella cheese
1 lg. eggplant
3/4 c. bread crumbs
1/4 c. parsley
2 eggs
1 env. spaghetti sauce mix
2 eggs
1/2 c. oil
3/4 c. Parmesan Cheese
Brown sausage (uncased); saute garlic and onion. Stir in tomatoes, beef broth and spaghetti sauce. Simmer 20 minutes.
Combine bread crumbs, Parmesan Cheese and parsley. Mix eggs and water. Cut eggplant into 1/4" thick slices. Dip eggplant in egg mixture and then in bread crumb mixture. Lightly brown in oil. Layer eggplant then sauce then mozzarella cheese twice in a 9x13" baking pan. Cover and bake at 425 degrees for 40 minutes.
