Twice Baked Potato's
5 lg. potato's
milk
1/4 c. butter
1/4 c. sour cream
1/4 c. cottage cheese
1/2 c. grated cheese
bacon bits
2 tsp. chopped chives
salt & pepper to taste
Boil potato's until soft. Drain water. Beat and add milk until consistency of mashed potatoes. Add butter, sour cream, cottage cheese, salt and pepper. Place in greased casserole. Top with grated cheese of your choice. Sprinkle bacon bits and chopped chives on top. Bake at 325 degrees for 20 minutes until cheese melts.
