Shrimp Stuffed Baked Potatoes

4 Large Round Baker Potatoes Baked until tender. Half the potatoes lengthwise
Scoop out insides but leave a little in the shell.
Add to potatoes
2 Tbl. minced garlic
2 cups shredded cheddar or cheddar-jack cheese
4 green onions diced
2 tbls butter
1 cup sour cream
1 lb coctail shrimp drained, put on paper towel to soak up extra juice
Salt and pepper to taste
Put back in the shell and top with some more cheese

Put back in oven uncovered to heat and melt cheese about 20 to 30 minutes on 325

For smaller amounts just cut down the recipe there really is no way to mess this up, you can play it by ear. Ham can be substitued to shrimp. Serve with salad.

Hey Lulu...you fix it and let me know what its like...because it didn't sound that good to me. Not, that it wouldn't be... just my personal preferrence. That is why I have a hubby...so he can taste my food before I eat it... .
