Cauliflower with Cheese Sauce
Cauliflower with Cheese Sauce
1 medium head of cauliflower (about 2 lbs.)
2 T butter
2 T flour
¼ t dry mustard
¼ t salt
1/8 t pepper
1 C milk
½ C shredded Cheddar cheese
paprika
Remove the outer leaves and stalk from the cauliflower; wash. Heat 1 inch salted water (1/2 t salt to 1 C water) to boiling. Add the cauliflower. Cover and heat to boiling; reduce heat. Boil until tender (about 20 to 25 minutes). Drain.
Heat the butter in a medium saucepan over low heat until melted. Stir in the flour, mustard, salt, and pepper. Cook over low heat, stirring constantly, until the mixture is smooth and bubbly. Remove from heat. Stir in the milk and heat to boiling, stirring constantly. Boil and stir for 1 minute. Add the cheese and stir until melted.
Place the hot cauliflower into a serving dish and pour the cheese sauce over it. Sprinkle with paprika.
