Stuffed Mushrooms

Stuffed Mushrooms

1 lb. medium mushrooms
1 small onion, finely chopped
¼ C finely chopped green pepper
3 T butter
1 ½ C soft bread crumbs
½ t salt
½ t dried thyme
¼ t ground tumeric
¼ t pepper
1 T butter

Cut the stems from the mushrooms and finely chop enough to make 1/3 C. Cook and stir the chopped mushroom stems, onion, and green pepper in 3 T butter until tender, about 5 minutes. Remove from heat. Stir in the bread crumbs and spices.

Heat 1 T butter in a shallow baking dish until melted. Fill the mushroom caps with the stuffing mixture and place them, filled sides up, in the baking dish. Bake uncovered at 350 degrees for 15 minutes.

Place the dish in the broiler. Broil the mushrooms with the tops 3 to 4 inches from the heat for 2 minutes.

This sounds good! I usually add bacon to my mushroom recipes! I will have to try it your way!
