Grilled Vegetable Quesadilla
These full flavored snacks make a great party appetizer.
Serves 2-4
4 large Flour tortillas
1 Green bell pepper, cut into strips
1 Zucchini, sliced
1 medium Red onion, sliced
1 Portabella mushroom, sliced
¼ cup Olive oil
1 cup Pepper jack cheese
S oil
Salsa
Guacamole
Sour cream
-Toss the vegetables with the olive oil. Grill until soft. Place ½ of the cheese on two tortillas. Top with the vegetables, the rest of the cheese and finally the remaining tortillas. Heat a skillet. S with the oil and add one of the quesadillas. Cook, turning once, until the cheese has melted and the tortilla is a light brown. Repeat with the second quesadilla. Slice into pie-like slices. Serve warm with sides of salsa, guacamole and sour cream.
