Roasted Sweet Potato Salad

Boy oh boy! Is this one good! I got it out of a Southern Living recipe book a couple of weeks ago.

Roasted Sweet Potato Salad

4 large sweet potatoes, peeled and cubed
2 tablespoons olive oil, divided
1/4 cup honey
3 tablespoons white wine vinegar
2 tablespoons chopped fresh rosemary
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
2 cloves garlic minced

Coat a large roasting pan with cooking s; toss together potato and 1 tablespoon of oil in the pan. Bake uncovered at 450 for 35-45 minutes or until tender; stirring after 20 minutes.

Whisk together remaining tablespoon of oil, honey and next 5 ingredients. Transfer warm potatoes to large serving bowl, add dressing and toss gently. Cool before refrigerating, can either be served at room temp or chilled.

dandylin this sounds delicious. I just printed it out and will make it as soon as get some more sweet potatoes! I love yams and sweet potatoes and usually have them around but baked my last one last Thursday :( I'm always looking for recipes that use them, so thanks lots for this yummy dish

On the rare occasion I go out to dinner I ask if they have sweet potatoes in place of plain baked taters, some places do, some don't. And don't ya just love those sweet potato fries ;)

OHHHH YEAH any orange veggie is yummy! I am going to get some sweet potatoes when I go out later...I just might make this tomorrow!
