Ranch Salad
DRESSING:
1/3 cup Mayonnaise
1/4 cup buttermilk
2 tbsp white wine vinegar
1 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
SALAD
1/2 of 1 head of iceberg lettuce,torn into bite size pieces
(about 6 cups)
2 red or green peppers ( I quite often use red & yellow for the attractive
color)cut into 1" triangles
1/2 of 1 cucumber, peeled, halved lengthwise, seeded, cut crosswise into 1/4
thick slices
1 large tomato, diced
1 small red onion, halved and sliced
2 scallions, green part only, chopped
Croutons if desired
Dressing: Combine all ingredients, refrigerate until ready to use.(I usually make it up the night before)
Salad: In a serving bowl, combine lettuce, peppers, cucumber, tomato, ontion and scallions. Just before serving toss with dressing. Top with croutons if desired.
