U.S. Senate Bean Soup
I've actually had this at the Senate Cafeteria!
1/2 lb dried navy or Great Northern beans (soaked overnite in water)
1 meaty smoked ham bone
2 small potatoes, cooked and mashed (no milk or butter)
2 cloves garlic, minced
1 small onion chopped
2 stalks celery, chopped
Black Pepper
Drain soaking liquid and measure, add enough water to make 2 quarts. Add ham bone and garlic. Cover and bring to boil. Reduce heat and simmer 2 hrs. Add potatoes, onion and celery. Simmer 1 hr longer or until beans fall apart.
Remove bones. Cut up any meat into small pieces and return to soup. Season with balck pepper and salt, if needed.
