Maurice Salad
Serves: 6 - 8
Dressing:
2 tsp. white wine vinegar
1&1/2 tsp. lemon juice
1&1/2 tsp. sugar
1&1/2 tsp. Dijon mustard
1/4 tsp. mustard powder
1 cup mayonnaise
2 Tbls. parsley
1 hard boiled egg, diced
1 med. onion, diced
Salad:
1 lb. cooked ham, cut into strips
1 lb. turkey breast, cut into strips
14 oz. swiss cheese, cut into strips
1/2 cup sweet gherkin pickles, sliced
1 cup green olives
1 head iceberg lettuce, rinsed, dried and shredded
Prepare dressing by whisking together first 6 ingredients. Add parsley, egg and onion,
mix well.
In a large bowl, mix meats, cheese, olives and pickles - add dressing and mix well. Divide lettuce
among plates, top with salad mixture.
