Warm Spinach Salad

makes 4 servings

2 Tbls. sliced almonds
1 Tbls. grainy mustard
4 Tbls. olive oil + 1.2 tsp additions for sauteing
2 Tbls. red wine vinegar
2 tsp. honey
1Tbls. fresh parsley, chopped
1/4 tsp. salt
1 thinly sliced red onion
1 tsp. minced garlic
1 (10 oz) package rinsed fresh spinach
8 thinly sliced mushrooms
mandarin oranges

In non-stick frypan brown sliced almonds for 30 seconds.

Whisk together mustard, 4 Tbls. olive oil, red wine vinegar, honey, parsley and salt, set aside.

Evenly arrange rinsed spinach on 4 dinner plates. Top each with 1/4 of the sliced mushrooms.

On low heat, in 1/2 tsp olive oil, saute red onion and garlic for 2 minutes. Add mustard mixture and almonds...cook until bubbly.

Top salads with mandarin orange slices and pour hot dressing over each. Serve immediately.
