Black Bean Soup
10 ounces yellow onions, diced
3/4 teaspoon garlic, minced (fresh only)
2 each bay leaves
1/4 cup olive oil
2 1/4 teaspoon Caribbean jerk seasoning
2 1/4 teaspoon cumin
3 - 14 ounce can black beans
1 quart water
1 quart low sodium

en broth
2 1/4 teaspoon Tabasco sauce
sour cream (garnish for finished soup)
Method:
In soup pot, sauté onions in olive oil until translucent.
2. Add garlic and sauté for 2 minutes.
3. Add seasonings and stir to combine.
4. Add black beans and remaining ingredients, bring to a boil and reduce to a simmer for 30 minutes to combine flavors.
5. Garnish with sour cream.
Yield: 10 servings
