3 c en broth (mine is homemade, canned stuff is stronger)
1 c cut up en
1 c diced tomatoes (if you use canned tom's, add juice; if fresh add sm can tomato sauce)
1/3 c rice
1/4 of a bell pepper, chopped
1/4 of an onion, chopped
1/2 c corn
2 tsp dried basil (less if fresh)
1/2 tsp pepper
1/2 tsp garlic salt
Make sure you use cooked en; put all ingredients in a pan, bring to boil, simmer until rice is done. Enjoy!
This recipe is almost how I make it except I don't use corn or basil and I add gumbo file and green tabasco pepper sauce.Sounds good though.Maybe I'll try it sometime.
