Dill & Chive Vinaigrette Salad Dressing
2/3 c. lemon juice
salt and pepper to taste
2 tbsp. Dijon Mustard
1 c. olive oil
2 tbsp. minced shallots
1/4 c. snipped, fresh chives
2 tbsp. fresh, chopped dill
Place the lemon juice in a small bowl. Whisk the mustard, salt and pepper. Slowly drizzle in the oil. Whisk constantly until thickened. Fold in the remaining ingredients. Let vinaigrette rest, covered for 1 hour before using. Use over seafood salad or tossed green salad.
