Cheesy Potato Soup
Serves: 1 Servings
Ingredients:
8 Potatoes, peeled and cubed
2 sm Onions, chopped
4 sl Bacon, fried crisp (reserve
-2 Tbsp. grease)
1/4 c Butter
1/2 lb Velveeta
4 oz Sour cream
2 c Milk
1 cn Cream of celery soup
2 c Potato water
Instructions:
Boil potatoes until tender. Set aside, reserving 2 cups of the water.
Saute onion in butter until tender. In large saucepan, add milk, potato
water, bacon grease, onion and butter, crumbled bacon, soup, sour cream and
Velveeta. Simmer all together until cheese is melted. Add potatoes. Simmer
until heated through. Add salt and pepper to taste.
