Forest Onion Soup
(serves 4)
2 cups sliced onions
2 cups water
2 tablespoons butter
1 1/2 teaspoon ground black pepper
1 sprig thyme
2/4 cup veggie or beef stock ( I used beef)
2/3 cup milk
2/3 cup cream
salt
Saute onions in some of the butter till tender. Mix water and beef
broth and bring to a boil. Add onions, thyme, pepper, and pinch of
salt. Bring back to a boil, lower temp and simmer, adding milk,
cream, and any left over butter
