Serves 2
4 cups miced salad greens
4 strips bacon, cooked and diced
3 eggs, hard-boiled and diced
1/3 cup croutans
1/4 cup red wine vinegar
3 tablespoons olive oil
1 teaspoon dijon mustard
Arrange the greens on 2 plates. Top with bacon, eggs and croutons. Whisk together the vinegar, oil and mustard. Brizzle over the salad and serve immediately.
