Grandma Pierpont's Vegetable Soup
1 lb. stew beef
3 med potatoes peeled and coarsely chopped
3 carrots, peeled and sliced 1/2 inch thick
3 stalks celery, sliced 1/2 inch thick
1 med onion, coarsely chopped
1 small head of green cabbage, coarsely chopped
1/4 c ketchup
2 T vinegar
2 T sugar
1 large can tomato juice
salt and pepper to taste
Brown beef. Add all vegetables ending with cabbage. Top with ketchup, vinegar, sugar and pour juice over all. Stir well and simmer for 3 hours.
This makes a HUGE pot but it freezes well. (Cans even better.) Excellent with crusty bread.
