Pasta Salad
1/2 cup olive oil
1/2 cup rice vinegar
2 cloves crushed garlic
1/4 tsp cracked black pepper
1/8 tsp salt
combine all 5 ingredients in a bowl and refrigerate for 2 hours or longer.
2 bunches green onions
1 bell pepper
1 can black olives (sliced)
1 package of pepperoni
1 large bag of tri-shaped pasta (rotini, penne, & shell, etc) Cooked and drained
Chop onions and bell pepper and pepperoni. Toss all ingredients together after the oil mixture has sat for 2 hours.
Chicken can be substituted for pepperoni, or in addition to.
If a crunchier salad is desired, cut out one bunch of green onions and add a chopped up RED onion.
Green olives can be added or subbed instead of the black.
If you love garlic, you can add more cloves.
Additional bell peppers can be added, in different varying colors.
Tri-colored, tri-shaped pasta will add a lot of color and fun.
This recipe is big, it will fill a LARGE bowl. But this recipe can also be easily doubled for big parties!
This is a FAMILY FAVORITE...and is ALWAYS a huge hit at dinner parties and events.
