Does anyone know a yummy pumpkin bread recipe?

Hello everyone...

I'm looking for a good recipe for pumpkin bread,do any of you's know of one?....TIA!....Debbie

Out of all the recipe books I have the only thing I can come up with that is close to pumpkin bread is a pumpkin loaf. It calls for raisins but you could leave them out.

Pumpkin Raisin Loaf


1 1/2 cups flour 1 tsp. baking powder
1 tsp. baking soda 1/2 tsp. salt
2 tsp. cinnamon 1 cup white sugar
2 eggs 3/4 cups mashed pumpkin or canned
3/4 cup cooking oil

In a large bowl, mix all ingredients together well. Then add 3/4 cups raisins.
Bake at 350 degreesF. for 1 1/4 hours. This makes a very moist loaf.

Pumpkin Spice Loaf

Beat 4 eggs, and add gradually:
1 1/4 cups white sugar
1 cup of oil
2 cups pumpkin
1/2 cup of corn syrup

Beat well, remove beaters and fold in until smooth:
3 cups sifted all purpose flour 2 tsp, baking soda
2 tsp. baking powder 2 tsp. cinnamon
1 tsp, salt 1 tsp, nutmeg
1 1/2 tsp, ginger
1 tsp. cloves

Add: 1 cup raisins and 1 cup chopped nuts.

Line two 9"x5" loaf pans with buttered wax paper.
Pour ingredients into pan and bake at 325 degreesF for about 65 minutes. (test with hpick)
Turn out on cake rack to , peeling off wax paper.

I got this first recipe from a cookbook I bought in Maine - it's delicious and since my son's birthday is on Halloween I've made just about every type of pumpkin bread, cake and dessert imaginable

Pumpkin Bread makes 3 loaves

1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger


Preheat oven to 350 degrees F. Grease and flour three loaf pans.

In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.

Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

Bake for about 50 minutes in the preheated oven. Loaves are done when hpick inserted in center comes out clean.

Another one for you

PUMPKIN BREAD
Makes 2 loaves.
a.. 3 1/2 cups all-purpose flour
b.. 2 tsp. baking soda
c.. 1 1/2 tsp. salt
d.. 2 tsp. cinnamon
e.. 2 tsp. nutmeg
f.. 3 cups sugar
g.. 4 eggs, beaten
h.. 2 cups of fresh pumpkin --> 16 ounces if using canned pumpkin
i.. 2/3 cup water --> if pumpkin is canned
j.. 1/2 cup water --> if pumpkin is fresh or frozen
k.. 1 cup vegetable oil
l.. 1 cup chopped pecans
Preheat oven to 350 F. Combine flour, soda, salt, cinnamon, nutmeg and sugar in large mixing bowl. Add eggs, water, oil and pumpkin. Stir until blended. Add nuts. Mix well. Pour into two 9x5" loaf pans. Bake 1 hour. Cool slightly and take out of pans to let on a rack. This tastes best if you wrap, refrigerate and wait a day to eat it. It keeps well in the refrigerator and can be frozen.

Here's my recipe ... my family just LOVES this bread!!! Plus, it's so incredibly easy!!!

1/3 cup shortening
1 1/3 cups sugar
2 eggs
1 cup canned pumpkin
1 2/3 cups flour
1 teaspoon baking soda
1/4 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup water
1/2 teaspoon vanilla
1/2 cup chopped nuts

Mix all ingredients together, beating well. Place batter in a buttered bread pan. Bake at 350 for 1 1/2 hours. Cool and slice.
