With the rising price of food, I find myself looking more and more for economical, nutritious meals that are tasty as well.
My personal fav. is Salmon Patties, which was a WWII stable here in the midwest.
The recipie:
One lg can Salmon
1-2 sticks diced (food processor okay) Celery
1/2 diced " " Onion
1 egg
8-10 soda crackers, mushed
Mix all indredients in large bowl
Fry on both sides at medium heat (or if short on time, brown and finish in microwave.)
Serve hot with a slice of lemon to squeeze over, goes nice with salad and garlic toast.
Serves 3
That sounds so good to me. I love salmon!
I used to make a casserole with two cans of boneless pink salmon. A can of either cream of en or cream of celery soup, and instant mashed potatoes. You mix the soup and salmon and put it in the middle of the casserole dish and make a nice ring around it with the mashed potatoes and put it in a 350 oven for about thirty minutes. Some people crush potatoes chips on top before baking, but I don't.
Lightening~ I love the sound of your recipe. Thank you. My question to you is, can the Soda Crackers be substitute w/Ritz crackers?
Second on the recipe, with the Cream of Celery Soup and Salmon, is there a way to use fresh Mashed Pototoes? I hate instant, but love the sound of this recipe.

I've sub'd Ritz crackers before, and it worked fine, (DH didn't notice the difference) but I like the plain soda crackers best! The Salmon/Crm of Celery Casserole sounds good!
