
Coconut Bread
Ingredients
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups sugar
1 cup vegetable oil
4 eggs, beaten
2 teaspoons vanilla
1 cup buttermilk
1-1/2 cups shredded coconut
2 cups chopped walnuts
Combine flour, baking powder, soda, and salt. Set aside. In a large bowl, combine sugar, oil, eggs, and vanilla. Add dry ingredients alternately with buttermilk. Stir just until moistened. Fold in coconut and walnuts. Pour into two loaf pans coated with non-stick cooking s

. Bake in preheated 300 degree oven on lowest rack for about 30 to 35 minutes or until

hpick comes out clean.
This is soooooo good. I can make it and 1 loaf is gone within an hour.
