Thought I would share some of my recipes for the 4th of July celebrations:Barbequed Garlic Chicken, Potato Salad with Shrimp, Dilled Cucumbers-
Barbequed Garlic Chicken
(use however many

Potato salad with shrimp(for twelve servings)
10 large baking potatoes, scrubbed
12 eggs
3 bunches green onions, chopped
6 dill pickles, chopped
1 cup chopped celery
1 (4 ounce can) (or fresh) shrimp
2 cups low-fat mayo
½ cup sour cream
salt and pepper to taste
2 tablespoons celery salt
2 tablespoons paprika
Place potatoes in a large pot, and cover with water. Boil until soft. Remove from water; set aside to

Place eggs in a saucepan, and cover completely with

water. Bring water to a boil for one minute. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and

In a large bowl, combine potatoes, eggs, green onions, dill pickles, celery, and can of shrimp. Mix in mayonnaise, sour cream, celery salt, and paprika. Season to taste with salt and ground black pepper. Chill for 2 hours, and serve.
Dilled cucumbers
2 medium cucumbers, peeled and thinly sliced
1/2 tsp. salt
1/2 cup sour cream
1 tablespoon lemon juice
2 tablespoons finely chopped green onion
1/8 tsp. pepper
1/4 tsp. sugar
1 tablespoon chopped fresh dill
In a small bowl, toss cucumbers with salt. Allow to stand for 10 minutes. Meanwhile, combine all remaining ingredients. Drain cucumbers and combine with sour cream mixture. Chill until ready to serve. Makes 6 servings.
