What kind of recipes where you looking for? Breakfast...lunch...dinner...desserts....snacks? I take care of my mother..she is diabetic, and I cook for her. I've found a lot of recipes that she likes. I'll be more than happy to share.
Here are a few ideas:
"Creamed" Chicken
2 chicken breasts, skin on and bone in
2 cups low-sodium chicken broth
1 tsp. marjoram
1/2 tsp. salt (optional)
1 stalk celery, chopped
1 small onion
1 tbsp. skim milk powder
1 tsp. cornstarch
1/4 tsp. white pepper
Put chicken, broth, marjoram and salt in saucepan. Bring to boil, reduce heat, cover and simmer until chicken is tender, about 20 minutes. Allow chicken to cool in liquid. When cool enough to handle, remove and discard the skin and bones and cut the chicken into bite-size pieces. Now degrease the chicken broth. Then bring the broth to a boil in a small saucepan, add celery and onion and cook until liquid is reduced to about half and veggies are soft. In small bowl, mix milk powder, cornstarch, pepper and 1-2 tbsps. of water until it is a smooth paste. Add the cornstarch mixture to the reduced broth and cook until thickened, about 3 minutes. Add chicken pieces and cook until heated. Serve over toast or rice or noodles or tortillas.
(This recipe only has 167 calories...6g carbohydrates....4g fat.....1g saturated fat.....and the exchanges are 3 lean meat and 1 vegetable)
Mixed Mashed Vegetables
1-1/2 cups peeled, chopped turnip or rutabaga
1-1/2 cups peeled, chopped carrot
1 cup peeled, chopped sweet potato
1/2 cup part skim ricotta cheese
2 tsp margarine
1/2 tsp salt (optional)
1/4 tsp ground white pepper
In a medium saucepan combine the turnip (or rutabaga), carrot, and sweet potato. Cover with cold water, bring to boil, lower heat and cook until veggies are very tender...about 20 minutes. Drain veggies...add ricotta cheese and mash, whip or press through a strainer into a mixing bowl. Stir in margarine and season to taste.
(This recipe has 164 calories.....19g carbohydrates...7g fat...3 g saturated fat....and the exchanges are 1 starch/bread, 1/2 lean meat, 1 vegetable, 1 fat....the serving size is 1/2 cup.)
Oatmeal Cookies
1/3 cup margarine
1/3 cup lightly packed brown sugar
1 cup all purpose flour
1 cup quick cooking rolled oats
1 tsp cinnamon
1/2 tsp baking soda
Cream the margarine and sugar together until lightly fluffy. Beat in 1/4 cup of water until smooth. In another bowl, combine flour, oats, cinnamon and baking soda. Stir into the creamed mixture. Preheat oven to 350 degrees.
Roll the dough out on a lightly floured surface to 1/4 inch thickness. Cut into 2-1/2 inch circles. Place on cookie sheet that has been coated with vegetable spray. Bake until golden brown around edges....10-12 minutes. Cool.
