at least thats what gram called them has anyone every had them? My grandmother used to make them from leftover mashed potatoes, she would fry them in a frying pan in the shape of pancakes. They got crispy on the outside and warma nd soft in the middle. I have tried to make them in the past but just have no luck, they never turn out right. Does anyone have any tips that might me get them right as I have some leftovers from Easter and wanted to do something different with them.

You know my mom use to make these when i was little, and i too have tryed to make them and they never turn out right. But your right, they are good, and if anyone has a recipe for them or can tell us how to make them, do, for they are yummy, and a great way to use up left-over mashed potatoes.
I wish I could u Countrymama, but I really dont care for them, so I never took interest in making them. I wish my Father In Law was alive yet......I was told by many people that he made the best potato pancakes. ...
Angie, i was just taking the potatoes and putting them in a pan with some grease. Didnt jive my way at all. But i believe i found a recipe, will post it in a few days, just dont have the time to look up now.
2 cups of mashed potatoes
1 egg
salt, black pepper
finly chopped onion (optional)
Mix the 2 cups of mashed potatoes, the egg, a dash of salt and pepper, and if you like,some fiely chopped onion (potato pancakes are good with and without onion).
Flatten into pancakes about 3/4 of an inch thick. Fry in butter, or margarine until golden brown on both sides and the center is hot.
Angie, I have just formed them into a patty shape and fryed in butter on both sides maybe i had pan too hot or because they either turn out like warm mashed piles of potates or stuck to the pan. Never in pancake form.
I dont remember her adding anything to her cakes so I never did (its been over 12 years since I saw her make them) I might be wrong.

Are you sure your mom made them from mashed potatoes and not grated potatoes?
Here's an authentic Jewish potato latke (pancake) recipe in case you want to try making them this way:
Potato Latkes (makes about 16, depending on size)
In a bowl:
Grate 2 large potatoes
Grate 1/2 small onion (optional but delicious!)
Soak potatoes and onion in water with 1 Tbsp lemon juice for 3 minutes
Drain well - then add 3 eggs, salt & pepper to taste &
1/4 cup biscuit mix, flour, matzo meal, or cracker meal
Mix until lumps are gone from flour or biscuit mix
In a skillet or frying pan:
Heat 1 cup oil to 325 degrees
Spoon mixture into oil to form pancakes
Fry until golden brown, turning once
(Traditionally served with sour cream and/or apple sauce)
These are yummy - I guarantee. A little extra work, with the grating and all, but well worth it. I've used my food processor to do the grating at times but then that's a pain cuz you have all those parts to clean. UGH
One more thing - my mom always grated one carrot in with the taters and onion - she said it kept the taters from turning brown and it does with that besides adding a kind of sweet flavor.
