2 1/4 c. green split peas, dried
2 1/2 qts. water
1 meaty ham bone
1 1/2 c. sliced onions
1/2 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. marjoram
1 c. diced celery
1 c. diced carrots
1 tsp. parsley flakes
Salt to taste
Cover peas with water and soak overnight or boil 2 minutes and let sit for 1 hour. Drain. Add 2 1/2 quarts water, ham bone, onion, and seasonings. Bring to a boil; cover and simmer 2 hours. Stir occasionally. Remove bone; cut off any bits of meat and return the meat to the soup. Add remaining ingredients. Cook slowly, uncovered, until as thick as you like it. Serves 8 to 10.

I would go with celery instead of the celery salt.........because I am not a big fan of salt...and ham has alot of salt in it all ready if u bought it from a store........well even if u had your own from a pig u bought , they still smoke it..........and it has a salty flavor to me........but if u are a salt lover..........sure u might want to give it a try......but also remember.......flavor is what u want in a soup and celery does soak up alot of flavor......if he a is pea soup lover , he might prefer the celery..........

One thing I forgot to add, when I make this recipe I do not add the onions,.......it calls for it, and I am a big onion fan, extra onions on everything, but in pea soup I do not perfer them, expecially sliced which they call for........maybe minced.......
