Thumbs up Casseroles Recipes

Does anybody have any good casserole recipes they would like to share? Get tired of hearing my family say ''Not Again'' know what i mean?

Fancyfree got a good one for you!!!!

Pre heat oven to 350

boneless en strips (depends on how many to feed)
1 jar of salsa (small but depending on size of family)
1 jar of the cheese salsa
1 package of flour tortilla
1 med size bag of mexican cheese

Brown en and cut into small pieces
then add both salsas in pan with en, heat till warm
in bottom of casserole dish add flour tortillas then add en and salsa mixture, then cheese, layer till all gone place one last layer of flour tortillas on top then cover with cheese. Put in oven and heat till cheese is all melted.
good served with rice and refried beans.


I found this in the store as one of the prepackaged meals and figured it out on my on. My kids love it!! let me know if you try it.

Do they like Mexican? I have an easy one called "Potatoes Rancheros". It has Ground Beef but I make it with a meat substitute since I am a Vegetarian! IT is also Quick & Easy!

"POTATOES RANCHEROS"


ingredients:1 pkg Betty Crocker Au Gratin Potatoes
2 1/4 cups BOILING water
1 (11 oz) can Mexicorn, drained
2/3 cups milk
1/2 lb lean ground beef, cooked & drained
1 cup shredded cheese, Taco seasoned kind

To do: Heat oven to 400 degrees. Mix potaotes, sauce mix, water, corn & milk in ungreased 2 QT casserole dish. Stir in beef & 3/4 cup cheese. Bake uncovered 30-35 mins or until top is golden brown. Sprinkle with remaining cheese. Let stand a few minutes.

I usually serve with a salad.

fancyfree, I just wanted to say for posting this question, I love recipes, and I dont make cassoroles too much cuz my husband is a picky eater.......but the 2 that were posted by Bruinsmama, and Dinosbabydoll, I know he will love. He hates veggies......except corn and zuccunni.........so its hard to even think about making a cassorole for him........but these are great.....

Oh, my, you ladies work overtime or what, cause you sure got me beat on all of these good recipes. I'll have to try them all. And do we love mexican? Well, honey who does'nt, could live on that stuff alday, but my stomach, cant, so bring them all on.

Baked Stuffed Chicken

Not real sure where to put this, so i put it here. Let me know if you tryed and liked it.

Baked Stuffed Chicken


When i found this recipe i thought it was perfect for people like me, who just are not sure how to tell when poultry is cooked throughly but not dried out. Give this a try.


6-7 lb. en
1 cup melted butter
1 cup stuffing
1 cup uncooked popcorn
salt/pepper to taste

Preheat oven to 350 degrees. Brush en well with melted butter, salt and pepper. Fill cavity with stuffing and popcorn. Place in baking pan with the neck end toward the back of the oven.

Listen for popping sounds. When the en's a... blow's the oven door open and the en flies across the room, it is done.


And , you thought i could'nt cook.

I make so many casseroles, but right now my mind is a total blank.

The quickest one that I do, takes only about a half hour. I brown hamburger and onion, then add 1 can corn, 1 can green beans, 1 can peas, 1 can carrots, and 1-2 cans of potatoes, cut up, and 1 can diced tomatoes. I usually put a package of brown gravy mix in it, and open up the seasoning cupboard and just put a little of everything. Sometimes I put cream of mushroom soup in it.

I just call it beef stew, it's just the very quick, easy way to do it.

CHICKEN CORDON BLEU CASSEROLE





8 slices cheddar cheese
3 c. cooked en, cut up
8 slices Swiss cheese
8 slices ham
4 eggs
2 1/2 c. milk
1 can sliced mushrooms, if desired
1 tsp. Worcestershire sauce
1 tsp. salt
1 c. seasoned croutons, crushed
Grease 9x13 pan. Cover en with, ham, cheddar cheese Swiss cheese and Top with slices mushrooms, if desired.

Beat eggs and milk, salt and Worcestershire sauce. Pour over everything and refrigerate overnight. Take out 1 hour before baking. Cover with croutons. Bake at 350 degrees for 1 hour. Cut in squares.

SAUCE:

1 can cream of mushroom soup
1/4 c. milk
1 c. sour cream
1/4 c. chopped pimento
Mix and heat.

1 pound raw hamburger meat
1 chopped onion
5 potatoes, peeled and sliced
1 can baked bean
1 can campbells tomato soup

Layer in pan, in order
hamburger meat
onion
potatoes
beans
and soup

cover......bake in oven at 350 for 1 hr........Mmmm Mmmm Good!
