Pan Bread?

Has anyone heard of or eaten Pan bread? My mom use to make it. She always made it in an cast iron frying pan like cornbread, but it didn't have in corn meal in it and the inside was white. My dad said that he thought she got the recipe off a Jiffy Mix box years ago but he isn't sure.
I have searched cookbooks and the internet but I have had no luck what so ever.

Well Tia I love a challenge and while I've HAD pan bread I've never made it myself. I did some searching and came up with a few recipes that may you. You can go to the Jiffy Mix site and at the top there's a "contact us" button...maybe if you ask nicely they'll dig out that recipe cause it's not listed anywhere. And while you're there you can request a recipe booklet for free. Waaaaa I don't have my set of cast iron skillets anymore - the ex took 'em!

Blue Cheese Corn Bread

1 (8.5 oz) box Jiffy corn muffin mix
1 egg
1/3 cup milk
1/2 cup crumbled blue cheese (2 ounces)
2 green onions
1 teaspoon pepper

1. Preheat oven to 350 degrees.
2. Grease 8" cast iron skillet.
3. Combine all ingredients in a medium bowl and mix till blended.
4. Put into a prepared pan.
5. Bake till firm to the touch-about 30 minutes.
6. Cool slightly-Cut into squares.

Corn Bread Supreme

1 box Jiffy Corn Muffin mix
small can creamed corn
8oz container sour cream
1 egg
butter

Melt enough butter to cover bottom of cast iron skillet or metal cake pan. In a mixing bowl, combine corn muffin mix, cremed corn, sour cream and egg. Mix thoroughly. Pour into cake pan over butter.

Bake in 350 degree oven 30-35 minutes or until lightly brown and hpick comes out clean.

CHEESE CORN BREAD

1 box Jiffy corn bread mix
1 egg
1/2 c. milk
1/3 c. finely chopped onion
1/3 c. grated Swiss cheese
1/2 c. grated Cheddar cheese
1 tsp. celery seed
Prepare Jiffy mix according to box directions using 1/2 cup milk and one egg. Pour batter into greased baking pan (9 x 9 inch). Sprinkle celery seed, chopped onions, and cheese over the batter. Bake in 400 degree oven until golden brown (approximately 15-20 minutes).

BROCCOLI CORN BREAD

1 tbls. onion salt (or to taste)
1 pkg. frozen broccoli
4 eggs
6 oz. cream cheese, softened
1 tsp. salt
1 stick butter
1 box Jiffy corn bread
Thaw broccoli. Drain well. Melt butter. Combine eggs, butter, salt, sour cream, Jiffy corn bread. Then add broccoli. Put in muffin pan (fill about 3/4 way up). Bake according to Jiffy directions.

Hi InternetMom,

I was reading your reply and realized something, at the end of my post I put TIA, which was suppose to be for THANKS IN ADVANCE, I didn't think about the name TIA and that someone might think thats my name.

Thanks for the recipes that you gave, unfortunately none of them are what I am trying to find, I wish they were though.

Thanks for the tip on Jiffy Mix, great minds must think alike b/c I did both of those with no luck at all.

Hopefully, I'll figure it, it was so good to me as a child.
