Thumbs up InternetMom's Pasta Salad

Serves 6 - 8 (I cut the recipe down for you ladies - I normally use double or triple these amounts)

8 oz. rotini (spiral pasta) cooked according to directions on package, drained well and rinsed in water
2 -3 tomatoes, sliced thin (or use 1 cup of cherry
tomatoes halved)
1 red onion, sliced thin
1 small can black olives, drained
1 1/2 cups cooked broccoli florets
1 small green or red pepper, sliced thin
1 - 2 carrots, scrubbed and sliced thin
1 cup cubed mozzarella cheese
1 cup sliced pepperoni, sliced thin or cut into small cubes
2 cups Italian dressing (it soaks it up, so you may want to add more later on - best with Good Seasons dressing mix but lately I make it with Just2Good or LightDoneRight dressings)

Mix all ingredients in a large bowl, cover and chill. Mix again before serving. This is much better prepared a day ahead and you may want to add extra Ital. dressing before serving.

This is just like the one I make and make TONS of it but I also add in some cubed chedder, cooked bacon pieces and Cauliflower..It is wonderfull!!!

Now that does sound good freebeex3 I don't care lots for bacon but the cauliflower and cheddar would be great additions. My dad ONLY uses Newman's Own dressings and sauces. I find them a bit pricey, but they are good. Sometimes I make my own dressing, using oil, vinegar and seasonings, too.
