Mrs. Dash Tamale Pie

Tamale Pie

Ingredients:
3 Tbsp. (45mL) plus 2 tsp (10mL) Mrs. Dash® Extra Spicy Seasoning Blend, divided
1 cup (240mL) yellow corn meal
4 cups (1L) water, divided
17 Oz. (476g) can whole kernel corn, drained
4 tsp (20mL) corn oil, divided
1/2 cup (120mL) chopped Spanish onion
1 lb (454g) ground sirloin
1 medium tomato, thinly sliced
8 Oz. (225g) can salt-free tomato sauce
1/4 cup (60mL) shredded reduced fat/reduced salt cheddar cheese
1/4 cup (60mL) shredded reduced fat Monterey Jack cheese
Serves: 6
Prep Time: 30 min
Cook Time: 1 hr, 10 min to 1 hr, 15 min

Instructions:
1. Preheat oven to 350°F (180°C).
2. Combine corn meal and 1 cup (240mL) water in large bowl.
3. Bring the remaining water to a boil in large saucepan.
4. Remove from heat, stir in corn meal mixture.
5. Stir constantly for 5 to 10 minutes or until thickened.
6. Stir in 2 tsp (10mL) Mrs. Dash® Extra Spicy and corn.
7. Cool for 10 minutes.
8. Heat 3 Tbsp. (45mL) oil in large skillet.
9. Add onion and cook until tender.
10. Add beef and cook until no longer pink; drain fat.
11. Add tomato sauce and remaining Mrs. Dash® Extra Spicy; mix well.
12. Lightly oil 2 Qt. (2L) c***erole, using remaining 1 tsp (5mL) oil.
13. Spoon corn mixture into c***erole, pushing it up sides of dish and smoothing with moistened spatula to make uniform thick crust.
14. Spoon meat mixture evenly over corn crust.
15. Sprinkle cheeses around edge of beef, near crust.
16. Bake 1 hour.
17. Serve hot.
