Caramelized Onion Pizza
2 tablespoons reduced-calorie margarine
2 cups thinly sliced yellow onion (about 2 medium)
2 tablespoons sugar
1 ¼ cups lite ricotta cheese
2 teaspoons Italian seasoning, divided
¾ cup (3 ounces) shredded part-skim mozzarella cheese
¼ cup grated Parmesan cheese
1/8 teaspoon pepper
1 (11-ounce) package refrigerated french bread dough

1 large unpeeled tomato, seeded and thinly sliced
¼ cup chopped fresh parsley
Melt margarine in a large skillet over medium-high heat. Add sliced onion and sugar; saute 5 minutes or until onion is deep golden, stirring frequently. Set aside.
Combine ricotta cheese, 1 teaspoon Italian seasoning, and next 3 ingredients in a bowl; stir well. Unroll bread dough, and pat into a 13 x 9 x 2 inch baking pan coated with cooking s

. Spread ricotta cheese mixture evenly over dough; top with tomato. Sprinkle with remaining 1 teaspoon Italian seasoning and parsley. Bake at 450 for 13 minutes. Top with onion mixture, and bake an additional 5 minutes.
