1 pound eyeof round roast , trimmed of all fat and sliced into 4-oz. steaks
4 tablespoons all-purpose flour
1/2 teaspoon light salt
1/4 teaspoon pepper
1 tablespoon vegetable oil

1 1/2 cups water
8 ounces skim milk
4 teaspoons all-purpose flour
Place steak slices between two pieces of plastic wrap and gently flatten with flat side of mallet. Combine the 4 tablespoons of flour, 1/2 tsp. salt and 1/4 tsp. pepper. Dredge the steak in flour mixture. Coat the skillet with non-stick s

. Brown the steaks over medium heat in the oil. Add the water and simmer, covered, for One hour. Check occasionally to see if more water is needed. Remove the meat from the pan and set aside. Combine the milk w/4 tsp. all-pourpose flour. Add to the skillet. You may need to add additional water if much of ithas cooked away. Stir the mixture until thickened. Return the meat to the gravy and simmer 5 minutes. Makes 4 servings; Has 11 Grams of fat per serving
