Glazed Carrots
4 tsp reduced-calorie margarine
1/4 red onion
1 Tbsp fresh lemon juice
2 tsp honey
1/8 tsp cinnamon
1/8 tsp salt
4 carrots, sliced and steamed
In a medium nonstick saucepan, melt the margarine. Add the onion and cook, stirring as needed, until softened, 2-3 minutes. Add the lemon juice, honey, cinnamon, and salt; cook, stirring constantly, until heated through and well mixed. Add the carrots; toss to coat.
Makes 4 servings.
