Delish Potato Salad (Lowfat)
Serves: 8 Servings
Ingredients:
4 lb New potatoes
1 1/2 c Low-fat mayonnaise; such as
-hellmann's
1/2 ts Salt
1/4 ts Fresh ground black pepper
1 tb Paprika
1 tb Celery seed
1 c Diced celery
1 sm Bunch green onions; white
-part only, thinly sliced
6 Hard-cooked eggs; yolks
-removed; coarsely chopped
Instructions:
1. Cut each unpeeled potato into about 6 slices. Steam potato slices for 20
minutes, or until tender. Cool, cover and chill overnight.
2. In a large bowl whisk together the mayonnaise, salt, pepper, paprika,
celery seed and green onions.
3. Add the potatoes and egg whites to the bowl with dressing and toss
gently but thoroughly, until dressing coats all the ingredients. Serves 12.
