Post Fatfree Chocolate Cupcakes

Serves: 12 Servings

Ingredients:
3/4 c Dark brown sugar; packed
1 Egg
1 Egg white
1 tb Oil
1/2 c Unsweetened cocoa powder
1 ts Vanilla extract
Confectioner's Sugar
1 1/3 c All-purpose flour
1/4 c Applesauce; cinnamon
-flavored
1 1/2 ts Baking powder
1 1/2 Teasspoons baking soda
1/2 ts Salt
2/3 c Skim milk

Instructions:
Preheat oven to 350 deg F. Line 12 muffin cups with paper liners. Combine
flour, cocoa, baking powder, soda and salt. Beat the next six ingredients
until combined, about 1 min. Stir in flour mixture alternately with milk
until just combined. Pour batter into muffin cups. Bake 22 - 25 minutes or
until hpick comes out clean. Remove cupcakes from pan; on wire
rack 30 min. Sprinkle with sugar, if desired

Another one I'm going to try. I'm trying to find low-cal treats to change my boys' eating habits. They are teens now and they are also junk food junkies. I try to stop this at home but they use their allowances to go to the local "crap" store and buy junk food LOL. Maybe if I find better tasking treats that are better for them ... I can curb the desire to eat the bad treats.
