Chicken Cacciatore

Serves 4

Preparation Time: 15 minutes
Cooking Time: 1 hour 15 minutes

Flour (enough for dusting)
4 split bone-in chicken breasts, skinned or skinless
2 Tbsp olive oil
2 large cloves garlic, peeled and minced
1 pkg (8 oz) sliced mushrooms
1 cup each sliced green peppers & onions
1 cup Italian Classics Crushed Tomatoes with Italian Style Herbs
1 can (14.5 oz) chicken broth

Shake light coating of flour onto both sides of chicken; set aside.
Heat large non-stick skillet on HIGH. When hot, add olive oil; spread by gently tilting pan, allowing oil to swirl over bottom.
Place chicken in skillet. Press down gently on chicken to establish good surface contact with pan. Cook 4-5 min, until golden brown. Turn chicken over; brown other side, about 3 min; remove from skillet. Remove excess fat from skillet, leaving about 2 tsp in pan.
Lower heat in pan to MEDIUM. Add garlic, mushrooms and sliced peppers and onions; cook, stirring occasionally, 3-4 min until vegetables have softened slightly. Add tomato and chicken broth; stir to mix.
Return browned chicken to skillet. Bring liquid to simmer, over LOW to MEDUIM heat. Cook, uncovered about 1 hour 15 min, turning chicken periodically. Salt and pepper to taste.
