Pumpkin Parfaits
2 tbs. butter
1/4 cup sugar
1 tbs. dark corn syrup
1 can (15 0z) sweetened pumpkin pie filling
1 quart vanilla ice cream
Line baking sheet with aluminum foil. Coat foil with 1/2 tsp. butter. Heat together the 2 tbs. butter, sugar, and corn syrup in saucepan, stirring until melted. Stir in walnuts. Increase heat and cook 3 -5 min. stirring constantly, until walnuts stick together, in a thick syrupy mixture. Pour walnut mixture onto prepared baking sheet, spreading quickly and thinly as possible with spatula. Cool at least 10 min. Peel nuts away from the foil.
Divide walnut mixture in half. Coarsely chop half the mixture, break other half into small pieces. In each of 8 parfait glasses layer the following: pumpkin, ice cream, chopped nuts, pumpkin, ice cream. Sprinkle tops with the remaining small pieces of nuts. Serve.
