I don't have an actual name for it BUT its YUMMY! OK ITs acroos between eggplant parmgan & a noodless Lasagna.
Take an eggplant & peel & slice bread & fry.
Lay it in a casarole dish poor spagetti sauce layer sliced zuccini & summer squash poor more sauce.
sprinkle mozerella & parmagan cheese more sause more veggies & more cheese contue layering until casarole dish is full but CHEESES on top bake at 350 for 30 & then enjoy its so good & good for you too!
Also add portabello mushrooms if you like OH MY GOODNESS is it good! EASY & INEXPENSIVE as well.
I've even used frozen Eggplant you just cook it longer!
