This is very good but can't get my family to eat it:( . It is a very colorfull dish as well!!

Mushrooms with Tomatoes and Peas

1 medium onion, sliced
1/2 to 1 teaspoon ground turmeric
1/4 teaspoon ground ginger
1 TBSP Ghee or Vegetable oil
1 Package (10 ounces) frozen green peas, thawed and drained
8 ounces whole mushrooms
2 teaspoons lemon juice
1 1/4 teaspoons salt
2 Medium tomatoes, cut into wedges

Cook and stir onion, turmeric and ginger in Ghee/Vegetable oil in 10 inch skillet over medium heat until onion is tender, about 3 minutes. Stir in peas, mushrooms, lemon juice and salt. Cook uncovered, stirring occasionally, until peas are tender, about 8 minutes. Stir in tomatoes; heat just until hot.

I would imagine olive would be fine..
Ghee- is an everyday ingeredient in Eastern cooking, Indian above the rest. The western world has its version -clarified butter-but true ghee is cooked more slowly and has a stronger flavor. To make ghee, butter is heated until the milk solids are skimmed off and saved and are sometimes used for flavoring vegetables. What is left after the solids are removed is a clear, yellow liquid: Ghee. Ghee doesn't burn at high temperatures, and it does not go rancid nearly as quickly as whole butter..
I have a recipe for it but much easier to use oil!!!
