India Chicken Curry
India Chick en Curry
1/2 cup onions, chopped fine
1/2 cup celery, chopped fine
2 tbsp margarine or butter
3 tbsp flour
1 tsp curry powder
1 1/2 cups c h i c k en broth
1/2 tsp worcestershire sauce
1 1/2 cups c h i c k en, cooked and chopped
1/2 cup tomato juice
2 cups rice, cooked and hot
In a medium saucepan cook the onion and celery in hot margarine or butter until tender. Stir in flour and curry powder. Add the c h i c k e n broth and worcestershire sauce. Cook and stir until bubbly. Stir in the cooked c h i c k en and tomato juice;. heat through. Season with salt and pepper if desired. Serve over hot rice.
