Ingredients:
3 cans (15-1/2 oz.) black-eyed peas, rinsed, drained
2 cans (13-3/4 oz. each)

en broth
1 pkg. (16 oz.) smoked sausage, browned, thinly sliced (you can use turkey sausage)
2 cups chopped onion
1 cup water
1 tsp. crushed red pepper
1/2 tsp. ground red pepper
2-1/2 cups white rice, uncooked
Mix peas, broth, sausage, onions, water and seasonings in medium saucepan; bring to boil.
Stir in rice; cover. Simmer 10 minutes or until rice is tender.
