Cajun Pepper Steak

1-1/2 pounds boneless round steak, cubed
2 tablespoons oil
1 can beef broth (14-1/2 oz.)
1 can diced tomatoes (14-1/2 oz.)
1 cup chopped green peppers
1/2 cup chopped onion
3 garlic cloves, minced
2 teaspoons Worcestershire sauce
1 bay leaf
1/2 teaspoon dried basil
Cajun seasoning (1/4 to 1/2 teaspoon)
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons cornstarch
2 tablespoon water
Hot cooked rice or noodles

In a large skillet, cook steak cubes in oil over medium heat until browned; drain. Stir in beef broth, diced tomatoes, chopped peppers, onion, garlic, Worcestershire sauce, bay leaf, dried basil, Cajun seasoning, salt and pepper. Cover and simmer 1 hour or until meat is tender. Discard bay leaf. Combine cornstarch and water until smooth and stir into meat mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over hot cooked rice or noodles.

Yield: 4-6 servings
