Thumbs up Salmon with Oranges

Makes 4 main-course servings.
Preparation time: 20 minutes.
Cooking time: 10 minutes.

3/4 cup fresh orange juice
1/2 cup canola oil
1 1/2 tablespoons fresh lemon juice
salt and freshly ground black pepper
3 large oranges, segmented
1 lemon, segmented
4 salmon fillets, skin on, rinsed and patted dry, pin bones removed (about 1 1/2 to 1 3/4 pounds total)


In a jar with a tight fitting lid, combine the orange juice, oil, and lemon juice and shake well. Season to taste with salt and pepper.
In a small bowl, combine the orange and lemon segments.
Preheat the broiler. Pour some of the dressing into a small bowl and brush over the fillets. Sprinkle with salt and pepper and place on a foil-lined baking sheet. Broil just until cooked through, 6 to 7 minutes. Drizzle about 1 tablespoon of the citrus dressing over the fillets, top each fillet with 1/4 of the orange and lemon segments, and serve.
