Ham & Sweet Potato Patties

Serves 6

Preheat oven to 375 F

2 cups corn flakes (or similar dry cereal) -
Put through food processor (using blade) and then set aside

Next put through food processor and chop coarsely:
- cubed ham-enough to make 2 cups (approx. 3/4 lb.)

Mix meat with:
- 2 cups mashed sweet potatoes (about 28 oz. canned)
- 1/4 cup milk
- 1 egg, lightly beaten
- 1/2 teaspoon salt (may be omitted)
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cinnamon
- 1/2 cup crushed pineapple, well drained

Shape this mixture into patties about 2 1/2 inches in diameter, then turn them over in the crushed cereal, arrange in shallow greased baking dish and sprinkle over each pattie
melted butter or margarine (approx. 3 tablespoons).
Bake 15 to 20 minutes.

If you don't have a food processor, put the corn flakes into a plastic bag, seal it and roll a rolling pin back and forth over the cereal to crush. Chop the ham finely with a sharp knife or put it through a food grinder.
